This recipe is by Dr Chintal Patel, who runs a successful Instagram page (@drchintalskitchen) which is dedicated to quick, healthy, family friendly meals. She’s GP within the NHS, a mum of two young boys and a passionate healthy cook. She believes there is a need for families to understand food and nutrition as a family and she focuses on making wholesome, nutritious, meals that the whole family can enjoy preparing and eating together. Whilst also coaxing children into the kitchen to encourage them to form a healthy relationship with food from a young age.
This recipe is simple, incredibly nutritious and meat free! It contains a good balance of fats from the nuts and seeds, protein from the beans, and nutrients from the beetroot.
Dr Chintal's Kitchen beetroot & black bean burgers
Ingredients (4 large burgers)
2 large beetroot (peeled and grated)
1 onion finely chopped
2 garlic cloves minced
1 tin black beans
1/2 cup pumpkin seeds
1 cup walnuts
1 tsp smoked paprika
Salt and pepper to taste
Pop all the ingredients into a food processor and pulse to combine. Make burger shaped patties and pop onto a baking tray. Bake for 15 minutes at 180ºC. Serve as desired.
