It is difficult to be healthy 24/7 and we all have certain weaknesses. Some cravings disappear as healthy eating becomes the norm but certain cravings rear their ugly head every now and again, and thats ok. We just need to remember that balance is important.
This recipe is perfect for those moments when you're craving something sweet and are missing your usual chocolate chip cookies. These cookies can be gluten free, just be sure to buy gluten free oats and chocolate chips. We haven't added in a lot of sugar so they are not overly sweet but if you have given up sugar they'll taste sweet enough. They're delicious just out of the oven and will last a couple of days; that is if you don't eat them all first!
Gluten free chocolate chip cookies
Ingredients (makes approx 16)
120g cashew butter
50g coconut sugar
1 tsp vanilla extract
20g coconut flour
20g oat flour
1/4 tsp salt
1/2 tsp baking soda
1/2 cup chocolate chips
Mix the cashew butter and the coconut sugar in a bowl. Then add the egg and vanilla extract and mix until combined. Add the flours, salt and baking soda and mix. Finally stir in the chocolate chips and then chill the dough in the fridge for 30 mins.
Preheat the oven to 180°C and line a tray with greaseproof paper. Roll the dough into small balls and place onto the tray. Flatten the dough with the palm of your hands. Bake for approximately 10-12 minutes. Let them cool for a few moments and then enjoy!
