Punjabi style cauliflower & quinoa rice

Rice and peas, if you're Punjabi you know that this is the ultimate comfort food and usually served with chicken curry, daal or rajma (red kidney bean curry). 

But if you're trying to incorporate more vegetables into your diet this is a good recipe to try instead of your usual rice. Cauliflower contains antioxidants and is high in vitamin C. Quinoa, is a nutritious super grain (also called the 'mother grain'), which contains better quality of protein than meat. It also has a nice nutty taste which adds a great flavour to this dish.

Together they make a pretty nutritious side dish or salad base. It has all the flavour you're used to and will keep you fuller for longer! Try making it instead of rice next time.   


Cauliflower & quinoa rice
Ingredients (2-3 servings)

½ cauliflower washed and grated
½  cup cooked quinoa
½  cup frozen peas
1 tbsp coconut oil
1 onion
1 tsp cumin seeds
Small piece of ginger grated
1 tsp cumin 
1 tsp coriander 
½ tsp salt

Method
  1. Add the coconut oil to a frying pan and melt over medium heat. Add cumin seeds, let them brown for a minute and then add the onions and ginger. Cook for a few minutes until the onions are translucent but not brown. 
  2. Then add the remaining ingredients, give it a good stir. 
  3. Pop on the lid and let it cook on medium heat for about 5 minutes until its nicely heated through. 
  4. Serve immediately!
